1 1/2 cups flour
1/2 cup sugar
1 1/2 tsp baking powder
1/4 tsp salt
1 egg
1/3 cup canola oil
3/4 cup milk
1 cup blueberries
2 tbsp sugar
2 tsp lemon rind, grated

Lemon Sugar Topping
2 tbsp butter, melted
1/4 tsp lemon juice
1/4 cup sugar

1. In a large bowl, mix flour, 1/2 cup sugar, baking power and salt. Make a well in the centre.
2. Combine egg, canola oil and milk. Add to the dry ingredients, combining just until moistened.
3. Toss the blueberries with 2 tbsp sugar and lemon rind. Fold into batter. Fill a greased muffin pan or paper muffin cups 2/3 full. Bake at 400F for 20 minutes.
4. While muffins bake, mix butter and lemon juice. Remove muffins from pan, dip in butter, then in remaining sugar. Place on a rack to cool.
