Hot Honey Beets

6 medium-sized beets
2 tablespoons canola oil
1 tablespoon butter
1 tablespoon honey
2 tablespoons chopped walnuts
1 tablespoon fresh thyme
2 tablespoons crumbled feta
salt and pepper

1. Preheat oven to 375F. Trim tops from beets. Toss beets in canola oil, wrap in foil, place on a cookie sheet and bake for 90 minutes. Remove from oven, let cool, scrape off skins and chop into one-inch pieces.
2. Melt butter in a frying pan. Add beets, honey, walnuts and thyme. Stir to coat. Heat for five minutes.
3. Place beet mixture on a serving place, top with feta and season with salt and pepper.
